As I’ve probably said before, and will definitely say again, I love porridge. Some people hate the consistency, but I find it the best comfort food in the world and would happily eat it for breakfast lunch and dinner. However…porridge is not, unfortunately, raw. Even when not cooked, the oats themselves aren’t technically a raw food. So, in my quest of replication, I discovered buckwheat groats, which are 100% raw and gluten-free (despite the ‘wheat’ part of its name!). This makes for a super easy lazy breakfast, when even the effort of chucking a bowl of oats in the microwave and waiting five whole minutes for it to cook feels too exerting in the morning.
~5 tbsp Buckwheat Groats
~Almond milk
~1 Banana (frozen)
~1 tbsp Peanut Butter
~Toppings! Pineapple, Blackberries, Cocoa chips
The night before, soak the groats in water. Unlike overnight porridge oats, the groats don’t completely soak up the liquid. In the morning, just rinse the groats and blitz with the rest of the ingredients. Top with whatever raw goodies and fruits you fancy.
This is so delicious, creamy smooth and filling, with the berries looking all oozy. As for the pineapple, I’m always on the look out for a good deal where fruit is concerned, and I picked up two of these for 2euro the other day! Find it hard not to eat them all in one go when that happens…
Organic buckwheat groats are really cheap; I get mine in Nourish health shop for 1.50euro, and I’d get at least 7 servings from it. Such a summer time breakfast; love it. And looks so pretty pretty.
