Sometimes, I feel like some buckwheat for lunch. Another opportunity to get crafty with toppings! Pomegranates are my latest discovery and I just love them. The actual fruit is a real patience buster when it comes to extracting all those tiny red pearls, so I buy them in fresh fruit-on-the-go tubs to save myself the hassle.
Prepare the buckwheat base as normal (read my post here on how this blitzin’ works) and top with the magical combination of pomegranates, sesame seeds (just 1 tsp sprinkled!) and dried dates and figs. This took me a while to eat…taste savoring at its finest.
