Wow did this taste rich and decadent! On an impulse I bought some Coyo Coconut yogurt and pumpkin puree, and decided to whip the two flavours together to recreate a pumpkin pie. I’m not mad about pure forms of coconut, like coconut milk/cream/yogurt, so I just used a tiny amount in this for taste and flavour. Soak the buckwheat groats overnight, blitz them with 3 tbsp of the pumpkin puree and 1 tsp of coyo yogurt. Top with dates and goji berries!
